Three well-known Manchester venues are joining forces to launch a new food and drink concept in a rapidly developing part of the city centre.
The Northern Quarter's Trof is set to collaborate with Manchester Union Brewery and Monton's Wandering Palate on The Trading Route. Located on Good Yards Street within the St John's district, it will neighbour the newly established Caravan restaurant and Aviva Studios.
Slated for a November opening, The Trading Route promises to serve a mix of cold beers, hot chicken, and a curated selection of upscale pantry items from Wandering Palate.
Matt Nellany from Trof said: "We've focused on bringing everything that people love about Trof to an exciting space in a new neighbourhood. It's going to be that perfect spot whether you're grabbing breakfast, stopping in for lunch, or settling in for a proper evening session."
Operating from dawn to dusk, this new bar boasts a purpose-built rotisserie offering freshly carved crisp whole and half chickens along with porchetta, complemented by an array of pickles and dips. The menu has been designed by the Trof team. reports other menu items will include focaccia, fresh salads and homemade sweets.
Wandering Palate, a local favourite from Monton, will bring expertly sourced pantry items to the upcoming venue.
Will Evans of Wandering Palate said: "It's brilliant to be bringing our wines, cheeses, and deli favourites to a new audience in the city centre. We've curated a selection of goods that we're really proud of, and, of course, we'll be there to help people discover something special to take home. It's an exciting space, and we can't wait for everyone to experience it."
The Trading Route will double as a lager house for the Manchester Union brewery. Their lagers will be served using a continental-style pouring technique and presented in bespoke Tübinger glasses.

We can't wait for people to come down to experience our very own lager house over a few pints this November."
Manchester-based studio PHAUS, known for designing the interiors of popular venues such as Jane Eyre, Erst, and Freight Island, is behind the layout of The Trading Route. Capable of hosting 150 guests, the venue features both indoor and outdoor seating areas.
