The team behind one of Bristol's best known dining spots has revealed the launch date for its latest endeavour. Chef and restaurateur Sam Elliott is set to expand his portfolio with the opening of Prime by Pasture this summer.
Billed as a new all-day dining restaurant, Prime will open its doors on St Thomas Street in the heart of the city's Redcliffe Quarter, on Monday, June 9. The restaurant will offer everything from coffee and breakfasts in the morning to burgers, signature sticky wings, and thick shakes throughout the day.
Catering to early birds, the venue will open from 8am. This announcement follows the resounding success of Pasture Bristol, which opened in 2018, and launched in 2022.

Sam also operates Pasture venues in Cardiff (opened in 2020) and Birmingham (2024), the latter being the group's largest site to date, along with other Cardiff establishments - Parallel and Nightshade - both of which opened in 2023. Last year, Pasture also ran a successful pop-up restaurant at the Bristol International Balloon Fiesta, which is set to return this year alongside a Prime pop-up featuring an all-day barbecue.
Prime by Pasture will also include on-site butchery and deli, reports . Pasture continues to promote grass-fed, ethically sourced beef in collaboration with Philip Warren and partners across the South West and Wales.
Proprietor Sam says Prime by Pasture is an important development for his brand.
He said: "We first announced that we would be bringing Prime by Pasture to the city at the beginning of last year – but with the Birmingham opening to manage, plans got delayed. We're now thrilled to be putting our attention back onto Bristol, going full steam ahead with getting the doors to Prime by Pasture open as soon as possible."
