Just Egg in Leicester cracks recipe for the "perfect, ready-made" poached egg

Company makes an award winning oval poached egg to eat on toast or in a salad, and a flat one for breakfast buns

A company which makes 1.2 million boiled eggs every week is reinventing breakfast with its pre-cooked poached egg range.

Just Egg is selling ready-prepared poached eggs, complete with runny yokes, that you can reheat as your morning coffee brews or eat on the go.

Company founder Pankaj Pancholi spent a year researching the idea before coming up with two different styles – a flat poached egg, called Just Round, for putting in breakfast buns, sandwiches and muffins, and an oval one, Just Oval, which you can eat on toast, put in eggs Benedict or have in a salad.

He said they are now on sale in 300 Morrisons stores as well as posh cafes in London and around the º£½ÇÊÓÆµ.

Anticipating growing demand, his business, Just Egg, which is based in Hamilton, Leicester, is investing £300,000 in a new factory to cook, chill and vacuum pack the eggs – which are all laid in the º£½ÇÊÓÆµ by free range chickens.

And because they are pasteurised they can last for around a fortnight.

Just Egg currently employs 65 people preparing around 200,000 boiled eggs each day for supermarkets and sandwich makers, along with around 20 tonnes of egg mayonnaise a week.

It also makes pickled eggs and supplies boiled eggs to Scotch egg makers.
